To guarantee even baking in the center of cakes, use the Heating Core
in pans that are 12" or larger. It's like a pan within a pan. Grease and
flour it inside and out, insert batter to the same level as you will in the
larger pan, place in the center of the larger pan and fill that pan with
batter. After baking, remove the core, remove the cake from the core and
plug the hole with it.
For perfectly level cakes, use the Magi-Cake strips. Saturate the
fabric strips in water, squeeze out excessive moisture, wrap strip around
outside of pan, place in oven and bake. When done, let strips dry out and
use again and again.
A professional method of greasing pans is with our Baker's Joy.
Because it contains flour and oil, simply spray Baker's Joy to get a nice,
thin, even coating of flour and oil. Fat free.
The easy way to remove hot cake pans from your oven is with the Pan
Gripper. Sturdy and heat resistant, it stands up to commercial
applications.
Use Cake Markers to be sure you will have enough pieces of the same
size to serve everyone. Just score the icing and cut along the lines.
Alternately, double the number of servings by cutting along the lines and
also halfway between them. Or halve the number of servings by cutting along
every 2 lines.
Pan liners, such as parchment paper and silicone baking mats, can
also play a big role in making life easier in your baking kitchen.
For consistent results, make sure that your ingredient measurements are
accurate by using a scale, instead of measuring cups, whenever
possible. And don't forget to keep an accurate thermometer in your
oven. |
