Carbon Steel Knives

Sabatier Mexeur et Cie
Professional Carbon Steel Knives
The carbon steel knife was the first of professional knives, still
used by those who appreciate their lasting edge, flawless performance,
and ease of sharpening. The
Mexeur et Cie design is among the oldest and most desirable.
· Takes a sharper razor edge than stainless
· Easier to re-sharpen than stainless
· Taper grind of blade helps keep it sharper longer
· The bolster is an integral part of the blade construction, and provides
balance, safety, and heft
· Identical to the designs of 150 years ago from Thiers, France
· Used by the finest French chefs and connoisseurs of top quality
knives
Features:
· One piece hot-drop forging, tempering, and sharpening each knife by hand
· Blade taper ground
· Integrated bolster
· Flat is narrower than most
· Handle diameter is smaller than most
· Requires proper care to prevent the blades
from rusting and staining
· Made in France
Materials:
· Fully Forged Carbon : XC55 - with 0.55 carbon
· High grade polymer handle with 3 aluminum rivets
· Polymer molded over the tang and rivets and ground by hand
· 58 to 62 HRC hardness
Warranty:
· Lifetime warranty against manufacturer defects; will repair or replace at
manufacturer's option.
· Note that discoloration or staining is normal, does not affect
performance, and is not covered under warranty. Also, the warranty does
not cover rusting, or damage resulting from dishwasher use.

Care Instructions:
· Wash knives with hot, soapy water by hand immediately after use, to prevent
food sticking.
· Dry immediately with a towel.
· Never soak or store in a humid area.
· Use silver polish or Barkeeper's Friend if you feel compelled to remove
any discoloration.
· Lighly wipe blade with mineral oil before storing.
· Use a steel for regular maintenance; angled at 20-25°
· Have the edge re-ground when you can no longer keep it sharp with a steel.
Rust. Yes, they'll get rust spots if left wet. But professionals
know to keep them dry. It's one of the reasons they stick a dishcloth in
their apron strings around their waist. Use the knife; wipe it clean and
dry. Store them
in a dry location and use them often.
Rust stains can usually be polished off. Rust from long-term neglect can
usually be sanded off, but inconsequential pock marks may remain.
If you wipe the blade with some mineral
oil before storing, eventually a protective layer, or patina, will form
on the knife, which will keep it from rusting and from reacting with acidic
foods. Polishing the blade will remove this coating.
Discoloration, or spotting of carbon steel knives is normal when
they come in contact with acidic foods (like tomatoes, onions, etc.) or
when left wet. To diminish discoloration, wipe or wash immediately after
use and apply a light coating of mineral oil to the blade. You can use silver
polish or Barkeeper's Friend to remove discoloration that may occur, however
this will remove the protective coating established by the oiling. Rest
assured, discoloration does not affect the quality of the knife.
Abuse. I remember a sign we used to post in our carbon
steel knife display: guaranteed to rust. I was always tempted to add another
sign to this and all our knife lines: Not a can opener; you'd be amazed
how often we repair broken tips due to their use as a handy dandy can opener.
Dishwashers are a no-no. Sabatier will not replace knives that are
damaged from dishwasher use.
There are a number of French cutlery manufacturers known by the Sabatier
name, each having its own distinctive logo. If you have another line of
Sabatier and require service, you will need to get in touch with the store
where it was purchased to find out its manufacturer.
