Cookie Presses
When using a cookie press or gun, don't grease the cookie sheet or jelly
roll pan. It will help the dropped cookie stick to the pan and come away
from the press or gun.
This works well if you have enough butter, or a substitute, in your
recipe, which will do the trick of keeping the baked cookie from sticking.
Or use a silicone pan liner on your cookie sheet.
Our recommendations: Marcato for heavy duty home use. Kuhn Rikon for
light-to-medium duty home use. The Sveico is easy to use, requires more care
than the others, and works best for making continuous strips, although it
also works well in making "drop cookies."
You can use these presses for many types of pastries and decorations. The
metal ones can even be used as a churrera, to make churros, provided you use
a towel to keep your hands from getting scalded. An alternative to cookie
presses is an icing bag, fitted with decorating tips that are available in a
wide array of sizes. |

Sveico Sprits Cookies Recipe
1-1/4 cups butter
1/4 cup sugar
3-1/4 cups wheat flour
1 egg yolk
Mix all ingredients to a smooth dough.
Fill the cookie press and use the star shape.
Press and make cookies of around 9 inches, shaped into a ring.
Bake on a buttered baking tray in a medium hot oven (400° F) for about 8-12
minutes
