Directions for the SILPAT®
SILPAT® Non-Stick baking sheet is designed for all types of ovens.
From bread baking to pastry making, SILPAT can provide even heat
transfer to your baked goods!
Effective in temperatures from -40° to 480° Fahrenheit (-40° to 280°
Centigrade). Safe for freezer to oven use.
Use flat, in any kind of oven. Place product to be baked or frozen on
the smooth side for easy release.
No greasing. Ensure it is dry and clean before placing any pastry on it,
then bake or freeze. Use in oven only with foodstuffs on the Silpat.
Allow baked food to cool down, then remove one by one, or by gently
lifting two corners of the Silpat carefully, allowing the food to roll
off the tray.
EASY TO CLEAN
-Wipe with a damp, soft sponge, then rinse with clean water.
-Shake to remove excess water and dry in open air.
-A weak solution of detergent or soap may be used if needed. Do not use
scrapers or brushes.
-Note: the oily feeling after washing is normal.
DO NOT!
-Do not use scrapers or brushes to clean SILPAT.
-Do not cut the SILPAT.
-Do not fold or crease the SILPAT.
-Do not grease the SILPAT.
CAUTION!
-Never use a cut or ripped SILPAT.
-Avoid the use of automatic dishwashers, as they may harm the SILPAT.

Mamma's Biscotti
6 eggs, at room temperature
1-1/4 cups sugar
1 cup vegetable oil (canola preferred)
3 cups flour
3 teaspoons baking powder
1 pinch salt
1 teaspoon almond extract
1 teaspoon vanilla or rum extract
1 cup small chocolate chips, unsweetened
· Beat eggs and sugar until smooth.
· Add oil, vanilla and rum.
· In a separate bowl, mix flour, salt and baking powder, then add to the
above mixture and mix together well.
· Then mix in the chocolate chips.
· Preheat oven 400°F.
· Pour mixture on a baking sheet with sides.
· Bake for about 20 minutes, until golden brown.
· Remove from the oven and slice in wedges.
· Turn the wedges on their side and bake for 10 minutes, or until
golden.
· Remove biscotti to a cooling rack, and allow to cool completely.
· Enjoy!
