More about thermometers
The most reliable thermometers
available today have a "bulb," a glass column that encases alcohol-based or
spirit-based material, and is not affected by external conditions. It will
give you accurate readings until it breaks. Take care to store these, and
all, thermometers, where they cannot be jostled, so that the liquid doesn't
separate; hang them upright, if you can.
Dial thermometers generally use
either bi-therm metals or a spring. Bi-therm stem thermometers comprise two
or more metals that expand at different rates with temperature changes,
causing the dial to turn when expansion and contraction occur. Spring
thermometers have an actual spring, which similarly expands and contracts,
causing the dial to turn. Of the two, bi-therm thermometers are more
reliable, and can usually be re-calibrated.
Oven thermometers should be a part of
every kitchen. Unless you have your oven recalibrated annually, chances are
good that the actual temperature will differ from the oven settings you
choose. And that will affect every food you cook in your oven.
Today, the most commonly used general purpose
thermometers are called "instant read," because they give you an
accurate reading in just a few seconds for digital ones, to about 30 seconds
for ones with dials. The probe must be inserted past a marked point, usually
about 1" or so, and their accuracy rate is +/-3°F, which is
generally acceptable.
Instant read thermometers need to be
adjusted from time to time. Insert the probe in boiling water (212°F
at sea level), and adjust (after cooling down to room temperature)
accordingly. There's a handy screw under the head for just that purpose on
dial thermometers, and many electronic thermometers can also be adjusted.
Use the pocket clip to store the thermometer in your apron or shirt
pocket, so it's always within easy reach. And use the the circular hook on
the pocket case to insert the probe into, so your hands can stay safely away
from hot, splattering foods.
Meat thermometers have a limited
temperature range, specifically for the indication of internal temperature
of the meat. Attaining the correct temperature is essential to kill off
potential pathogens.
Candy, jelly and deep fry are lumped
together because of the temperature range required for these foodstuffs. A
correct temperature is crucial. Remember good safety habits when dealing
with these and other hot foods.
If the fridge or freezer are not
maintained at the correct temperatures, spoilage can occur easily. The
freezer should be kept between 0 and -10°F, and the fridge
between 34 and 40°F.
Position a thermometer's probe away
from materials that can affect the temperature reading, but not the
temperature of the substance being measured. Like bone, for example, or the
side of a pot.
Infrared surface thermometers measure
the temperature of a surface. You can easily check the temperature of
your fry pan for the optimum time to add food (about 400° F), the food in
your fridge or freezer, or even in the supermarket or on the table. The one

touches the surface, so it stays clean. (You can also use it to measure your
car engine's temperature, or from windows, walls, heating and air
conditioning grills, etc.)

Instructions for Reuniting Separated Fluid Column
of Non-Mercury Thermometer

Heating Method
Heat the thermometers bulb in an upright position away from your face in
warm liquid, air, or over a soft flame sufficient to allow the liquid column
to rise slowly until the separated portion of the column enters the
expansion chamber at the top of the thermometer. Note that over filling the
expansion chamber will break the thermometer. Tap the thermometer gently on
the surface of a large rubber stopper in an upright position allowing the
gas separating within the column to rise above it. Allow the thermometer to
cool slowly in an upright position.
Cooling Method
Prepare a solution of shaved ice and salt or CO2 (Dry-Ice) and alcohol.
Place the thermometer bulb only in the solution. Keep the thermometer
upright. Allow the liquid column to retreat into the bulb, swing the
thermometer (Bulb Down) in an arc releasing the entrapped gas, permitting it
to escape above the column. Allow the thermometer to warm slowly in an
upright position.

Some additional info about mercury thermometers...
The mercury thermometer was invented by British physician Sir Thomas
Allbutt in 1866, and has been the primary method used for taking accurate
temperature readings. Health concerns, due to the extreme toxicity of
mercury, have prompted governments to ban its sale and use in most
countries. Sweden banned it in 1992 and France did it in 1999. Many states
in USA have already banned it or are in the process of doing so.
Now in general usage are alternative non-mercury liquid-column thermometers
that are spirit-filled (alcohol-based), as microprocessor-based thermometers
with digital readouts, and the (less accurate) dial-type bi-therm
thermometers with dual-metal sensors in the probe. The non-mercury
liquid-column and microprocessor-based thermometers have been tested to be
just as accurate for cooking and household uses as the older mercury-filled
column thermometers.
A word of caution. Mercury is highly poisonous in minute quantities. If you
have any mercury-filled thermometers in your possession, please dispose of
them through your local municipality's hazardous waste disposal programs, or
contact the Environmental Protection Agency's office in your area. More info

Instructions for Re-Calibrating
Many Bi-Therm Dial Thermometers
If your dial thermometer has a nut under the head, then it's quite likely
that you can re-calibrate it. (Check the manufacturer's instructions if in
doubt.) You can use either the Hot or Cold methods below.
Tools needed: Pliers, sauce pan, water or shaved ice.
Hot Check:
Boil some water and, when it reaches a rolling boil, carefully insert at
least 1" of the stem (probe) into the water. (Many thermometers have a
little clip on a holder, which the stem fits into, keeping your fingers away
from the heat.) In less than 30 seconds you should have a reading. It should
read 212°F if you're at sea level. (If you're not at sea level, adjust
according to the difference in your area.) If it reads differently, take
note of the difference.
Cold Check:
Place shaved ice into a sauce pan or other container, and insert at least 1"
of the stem (probe) into the ice. In less than 30 seconds you should have a
reading. It should read 32°F. If it reads differently, take note of the
difference.
Remove the thermometer and let it return to room temperature.
When
the thermometer has reached room temperature again, hold the round head with
your fingers, while you turn the nut slightly with a pair of pliers, for the
number of degrees that you noted above.

thermometers.

Temperature
for All Whole Cuts of Meat
The USDA has revised the recommended minimum cooking temperature for all
whole cuts of meat,
including pork:
Cook whole cuts of pork, steaks, roasts and chops to 145°F as measured
with a food theremometer placed in the thickest part of the meat,
and then allowing the meat to rest for 3 minutes before carving or
consuming.
