Air fast hydrating is a powerful emulsifier, capable of binding mixtures that would normally separate, such as oil and water.
It also allows liquids to be frothed into light and airy, yet stable, foams or "air". These foams are created by beating air into watery liquids with a frother, aquarium pump fitted with a pipette (must poke holes in the bulb of pipette), or an immersion blender.

Ready in a few steps
1. Weigh out or measure 100 g (100 ml) of liquid (with smoothies, dilute 1:2 with water, woodruff syrup 1:10 with water)
2. Pour the liquid into a tall glass
3. Add 2 measuring spoons of AIR instant and stir in well with a whisk
4. Assemble aquarium pump with diffusor pipette and switch on
5. Remove finished foam with a spoon, eat immediately or use as a topping
Forest Fruits Foam
» Mix 1 forest fruit smoothie 1:2 with water
» Pour 100 ml of this mixture into a tall receptacle
» Add 2 measuring spoons of AIR instant and stir briefly with a spoon
» Fix a pipette to the tube and attach this to the membrane pump
» Attach the tube to the upper edge of the receptacle so that the pipette is in the smoothie mixture
» Switch on the pump
» Now you can easily remove the foam and either enjoy it on its own or use it as a topping
