Materials:
-Fully Forged Carbon : XC55 - with 0.55% of carbon
-High grade polymer handle with 3 aluminum rivets
Polymer molded over the tang and rivets and ground by hand
-58 to 62 HRC hardness

Warranty:
-Lifetime warranty against manufacturer defects; will repair or replace at

Care Instructions:
-Wash knives with hot, soapy water by hand immediately after use, to prevent
food sticking.
-Dry immediately with a towel.
-Never soak or store in a humid area.
-Use silver polish to remove any discoloration.
-Use a steel for regular maintenance; angled at 20-25o
-Have edge re-ground when you can no longer keep it sharp with a steel.
Carbon steel knives were the first of professional knives, still
used by those who appreciate their lasting edge and ease of sharpening, and
who don't mind the discoloration that occurs when cutting acidic foods.
Yes, they'll rust if left wet. But professionals know to keep them
dry. It's one of the reasons they stick a dishcloth in their apron strings
around their waist. Use the knife; wipe it clean and dry. Store them in a
dry location and use them often.
I remember a sign we used to post in our carbon steel knife display:
guaranteed to rust. I was always tempted to add another sign to this and all
our knife lines: Not a can opener; you'd be amazed how often we repair
broken tips due to their use as a handy dandy can opener.
Dishwashers are a no-no. Sabatier will not replace knives that are
damaged from dishwasher use.
Discoloration, or spotting of carbon steel knives is normal when they
come in contact with acidic foods or when left wet. To diminish
discoloration, wipe or wash immediately after use. You can use silver polish
to remove discoloration that may occur. Rest assured, discoloration does not
affect the quality of the knife.
We do guarantee them for a lifetime against defects in manufacturing,
but not against rust, which, if it happens, comes long after the
manufacturing process is completed. But not to worry; scour off the rust and
the knife will perform like new. If you accidentally break a point, we're
happy to re-point the knife; you just pay for the shipping. (Or take it to a
local knife sharpening service for repair.)
