Charlotte, Eclairs
These classic charlotte molds are made of metal, which is still
the best material because of its superior conductivity for both hot and
cold. For hot fruit charlottes, this makes browning easier. For cold, cream
charlottes, this makes chilling quicker. (Tip: a warm towel around the cold
mold facilitates removal.) The pan's traditional handles are shaped like
hearts.
The charlotte originated around the beginning of the 19th century
in England. This fruit-filled hot dessert, called Charlotte de Pommes, was a
tribute to King George IV's daughter, Princess Charlotte. When chef Antonin
Carême later relocated to Russia, he created a cold version, called
Charlotte Russe.
Charlotte de Pommes, or Apple Charlotte, consists of a thick, flavorful
apple puree baked in a mold lined with buttery strips of bread. Charlotte
Russe is a smooth Bavarian cream chilled within a shell of ladyfinger
cookies. The flavor of the gelatin thickened cream is open to
improvisations, such as with fillings of raspberries, boysenberries,
blackberries, strawberries, or a pureed mixture of any of these berries.
Lids are useful when making hot charlottes. |
