Raclette

'Racler' is a French word, meaning to scrape off. Originally, cheese was melted near an open fire and the melted cheese was scraped off and added to dishes.

Melting cheese using this method was supplanted by a convenient utensil that holds part of a cheese form and melts the top layer with an electric heating element. Repeatedly, the melted layers are scraped off for each guest, and enjoyed either as the sole spread on bread, or together with other foods.

Newer versions of the raclette are intended for tabletop use by all the guests. These raclettes have a platform that is used as a cooking surface for accompaniments, and a space underneath which accommodates individual pans with the cheese to be melted. With this method, other foods can be mixed with the cheese before or after melting. Foods to be grilled on top of the platform can include small chunks of meat, fish, poultry and vegetables.

The knife we offer is used for cutting off the rind with the serrated side, and for scraping the softened cheese into a dish.

The wooden spatulas are used to scrape food from the small dishes without marring their surface.
