Oils - Generally pure, containing no alcohol or water. Preferred
and safe for most uses. Must be used sparingly.
Extracts - Diluted oils, usually containing about 20% pure oils
and the rest are additives. Alcohol is frequently used as an additive.
Flavors - When oil is not available for the flavor, natural and
artificial flavors are used instead. Food-safe additives, possibly including
alcohol, make up the bulk of the contents. Alcohol-free flavors must be used
in the preparation of certain foods, like hard candies.
Note that Essence is a general term that can mean an oil or an
extract, or a concentrated substance made from animal or vegetable.
Gluten Free: anise oil and extract, all the vanillas, including
the powder.

Making Liqueurs
Here's a simple recipe for making liqueurs
using the above Imitation Flavors
Cordials
Dissolve 10 ounces of white granulated sugar in one pint of boiling water,
stirring gently until sugar is completely dissolved, to make the syrup.
Allow to cool.
Separately, mix one-half ounce of flavor to 12 ounces of Tax-Paid alcohol.
(Most people use vodka.)
After the syrup has cooled, add the alcohol and flavor mixture.
Makes one quart.
Liquors
1 pint Tax-Paid alcohol
1 pint water
1/2 oz flavoring
