Grain Mills
There are three basic types of grinding mechanisms for readily available
grain mills:
- Plates, of iron, steel or stone;
- Spinning metal blade, as in food processors;
- Burrs, usually of steel or iron, and lately of ceramics.
Metal Plates. These are used for general purposes, and are more
useful in grinding oily grains, spices, nuts, etc. Tip: To keep oily foods
from clogging the plates, combine them with a dry ingredient, such as sugar
or flour. Coarser iron plates are usually plated with tin. Steel plates
usually give you finer grain. Care must be taken in cleaning, since iron and
steel easily rust. Thorough drying is a must, and a little oiling will help
keep them rust free. Iron is the least expensive of the two.
Stone Plates. Made of stone, these mimic those of the old mills
that used to be found along every river. They are very exacting and produce
the finest grains of flour. They are made to work with dry grains; oily
foods easily clog the stone, which is then not so easy to clean.
Spinning Blades. The newest innovation in mills, allowing you to
use your food processor, or coffee mill, to grind down grains. To get
more evenly sized grains, pulse on and off continually until done. Use
a low speed on oily foods if you want coarse, not creamy,
results. Add dry ingredients to help keep oily foods dry and less apt to
cream.
Metal Burrs. You're probably familiar with burrs found in manually
operated coffee mills and pepper mills. The burrs' ridges are made to grab
the grain or seed, and guid them downward by their movement. The
narrowing opening between the moving burr and the stationary burr
breaks them into smaller and smaller particles, until they are small enough
(or smaller) to go through the bottom opening. These can also work well
with other grains, spices and nuts. They are very exacting in their results,
but very difficult to clean, so they are recommended for use with only
one type of grain or seed. Usually made of iron or steel, they must be
kept dry and oiled. (The natural oils in coffee and pepper keep those mills
in good working condition.)
Many mills can be adjusted to provide varying size results. With plates
and burrs, you adjust the size of the opening from which the food must
exit. With spinning blades, you adjust the amount of time the blades spin. |

Note: An electric flax mill is faster and more convenient, however
you can also use a new or washable pepper or spice mill that has a ceramic
mechanism. Unless the mill is washable, use it only to mill one type
of seed in order to avoid mixing in the flavor of pepper or other spice
previously used in the mill.
