Panettone and pandoro are delicious traditional Italian sweet yeast
breads, most popular around Christmas and other special occasions.
Panettone also usually contains citron and pine nuts, and can be enhanced
with anise or chocolate, or a variety of other sweet ingredients. Serve it
with a main course or dessert.
The traditional pans are made of tinned steel, and can be quite versatile in
shape. Glass is easy to use, and accommodates the microwave.
The disposable paper molds are fine for use in the oven, since the
temperature setting for panettone is well below the burning point of paper.
This grease-proof paper is convenient, since you can serve the baked
panettone (which will look like a chef hat or mushroom) right in it. You can
cut slices through the paper, too.
Mary Ann Esposito has some wonderful recipes on panettone, and Mario Batali
on pandoro. |
