The Puntarelle Cutter (Tagliapuntarelle) is a great tool for preparing puntarelle, as well as other types of chicory and similar veggies, for salads.
After cutting off the leafy portions, and sizing the stalks to fit in the Puntarelle Cutter, gently push into the wire and pull out from the other side.
2" round cutting area
4 x 4", 5/8" thick birch plywood board
18/8 stainless steel cutting wires set approx 1/8" apart
Simply wipe dry after use.
