Smoke-cooking is a healthy way to infuse flavor without the use of fats,
salts or oils.
The Camerons stovetop smoker allows you to hot-smoke food right in your
kitchen. The process retains moisture and natural cooking flavors so foods
don't dry out or get tough. If you keep your heat setting at Medium or
lower, expect about the same amount of smoke as from any other pot on your
stovetop. And you can also use it as a steamer.
For smoking in a regular barbecue grill, use the larger wood chips, about
a handful at a time, according to the instructions below. The wood-chip
smoker box helps contain the chips, and is most useful with ceramic
briquettes.
- Soak wood chips in water, or wine, for about 30 minutes before cooking.
- Drain the chips of excess water.
- Place them in the Smoker Box.
- Place the Smoker Box over the hot charcoal or briquettes.
- Close the barbecue cooker's top to keep in the resulting smoke.
And for year-round seasoning, add Liquid Smoke to your ingredients, or
brush it on the food before cooking, or use it as a marinade. |
