Cavarola Board

The Cavarola Board is used to form a pasta called Stracenate, or Stracnar, a form of orecchiette, except larger and flatter, that is a typical specialty of the southern Italian regions of Puglia and Basilicata, and characterized by its impressed herringbone pattern.

Our wood Cavarola Board is double sided, carved with a different pattern of our design on each side. Rolling pin not included.

Simply place a sheet of rolled dough over one side of our Cavarola board, then roll the pin over it to impress the pattern. Use a pasta cutter or knife to cut the sheets into small rectangles, or traditional 2" squares, and they're ready for cooking, or freeze for later use.

9-1/2" x 6-1/4" patterned area, perfect for sheets rolled on home pasta machines.
